My set up is down in my basement. Less the neighbours know the better. Don't want any of them watching.
Two nails about six inches apart have two loops of wire with a small piece of wood that act like a bolo tie. These open and close loops hold the feet at about eye level over a garbage can. Next to the can I have a butcher block and a pile of newspaper near by. Three buckets of cool water and a pan of bleach water.
I put the dinner rabbits in a cage around a corner from the action so they can't see what's going on either.
Select the first. Spread some newspaper on the block. Put it on the paper with one hand on it's hips. Say "God who is greater?" Bop them between the eyes and ears with an empty champagne bottle. Take my ultra sharp large knife cut off the head. Hold them by the scuff and hind feet into the can until they slow bleeding. Slip the feet into the loops and Cut off the tail and front feet with a pair of pruning shears. Take up my five-inch knife cut a circle around each hind leg elbow then poke the point under the skin and cut across kind of a U shape back to the other side peeling the fur off the legs as I go. Then I pull the skin down to were it catches on about the
groin and do a little pulling and slicing action to get it going. Once it starts pulling easier the rest slips off like a sweater. On a older rabbit some more pulling-scraping is needed over the shoulders.
If any hair is still on the rabbit I wet my hands and collect it off. Wash up a little in the bleach water.
Naked rabbit has a convenient line down its centre. A little up and then with two fingers holding it open cut this line down to the brisket. Cut a small circle around the anus and pull the viscera out dropping it in the can. Then with the bigger knife cut open the chest down through the throat. Pull out the lungs and heart.
Then cut a V between the hind legs down to the backbone cracking them back to be sure there is nothing between them. Use the pruning shears to remove the hind feet. Into the first bucket of water with it. Wash up a little. Fresh newspaper. Next.
As more rabbits are done move them ahead in the buckets then back down feet up into Ziploc's. Then into a refrigerator for two or three days for ageing then cook or freeze. I can do ten in less than an hour. Including cleaning before and after. I have a garden hose on my hot water tank for a final all over rinse.
